The Pascal Jolivet 2023 Sancerre “Sauvage” is a striking, mineral-driven Sauvignon Blanc from the eastern Loire, offering a highly expressive and elegant profile.


🍋 Appearance & Aromatics

  • Color: Pale, vibrant straw.

  • Nose: Refined and expressive with flinty minerality, white orchard fruit (apple, pear), subtle citrus, meadow blossoms, and delicate smoke or brioche accents.


👅 Palate & Structure

  • Texture & Body: Medium-bodied yet racy and taut—tension-filled with a mineral backbone and firm acidity .

  • Flavors: A vivid mix of crisp orchard fruit, citrus, and pronounced stony minerality, with hints of flint, light herbal tones, and persistent salinity.

  • Finish: Clean, lingering, mineral-laced—leaves a lasting impression .


🛠️ Winemaking & Terroir

  • Soils: A thoughtfully curated blend—50% limestone, 30% clay-limestone, and 20% flint—vinified parcel by parcel in temperature-controlled stainless steel.

  • Vinification: Gentle, gravity-fed sorting and light pressing preserve pristine fruit expression. Lees aging enhances texture without adding overt creaminess.
